Abstract


ABSTRACT

 

The objective of this research is to determine the uterus of nutrient in Two Varieties Types Cassavas (Manihot esculenta), based on crop age by using proximate method. Sample of cassava that used in this research was get from Siney village, Tinombo Selatan District, Parigi Moutong Regency. The method that used in this research is descriptive research by using proximate analysis method with approach protein analysis was done through macro kjedhal method, the fat was analysis with soxhlet method, analysis of water rate by used oven method, the crude fiber was analysis by used of wash method, analysis of ash rate with used Tanur method, and analysis of carbohydrate did by proximate method. This research was conducted in nutrition and livestock food laboratory, ranch and fishery faculty, Tadulako University. And then the researcher has been gotten the result analysis of nutrient uterus in two varieties cassavas they are: varieties Adira cassava with short crop age(7 months) gotten the analysis of water rate 66,20%, crude fat 0,83%, crude protein 2,45%, crude fiber 0,73%, ash rate 0,66%, and carbohydrate 29,17%. varieties Bogor cassava with long crop age (12 months) gotten by analysis water rate 53,99%, crude fat 1,00%, crude protein 1,88%, crude fiber 0,57%, ash rate 0,69%, and carbohydrate 46,87%. This result gets to be made by base to clarify that the difference variety and the cassava crop age will produce the result uterus of nutrient was different. Based on the uterus of nutrient in two varieties types cassavas (Adira and Bogor) that has high enough nutrient uterus is the cassava variety Adira.

ABSTRAK

Penelitian ini bertujuan untuk menentukan kandungan gizi dua jenis varietas singkong (Manihot esculenta) berdasarkan umur panen dengan menggunakan metode proksimat. Sampel singkong yang digunakan pada penelitian ini diperoleh dari Desa Siney, Kecamatan Tinombo Selatan, Kabupaten Parigi Moutong. Jenis penelitian yang digunakan adalah deskriptif, analisis proksimat menggunakan pendekatan metode Makro Kjedhal pada analisis protein, motode Soxhlet pada analisis lemak, metode Oven pada analisis kadar air, metode Pencucian pada analisis serat kasar, metode Tanur pada analisis kadar abu dan analisis karbohidrat dilakukan dengan cara perhitungan Proximat. Penelitian ini dilaksanakan di laboratorium Nutrisi dan Makanan Ternak, Fakultas Peternakan dan Perikanan Untad. Selanjutnya diperoleh hasil analisis kandungan gizi dua jenis varietas singkong yaitu : Singkong varietas Adira dengan umur panen pendek (7 bulan) diperoleh analisis kadar air 66,20%, lemak kasar 0,83%, protein kasar 2,45%, serat kasar 0,73%, kadar abu 0,66%, dan karbohidrat 29,17%. Singkong Varietas Bogor dengan umur panen panjang (12 bulan) diperoleh analisis kadar air 53,99%, lemak kasar 1,00%, protein kasar 1,88%, serat kasar 0,57%, kadar abu 0,69%, dan karbohidrat 46,87%. Hasil ini dapat dijadikan dasar untuk menyatakan bahwa perbedaan varietas dan umur panen singkong akan menghasilkan kandungan gizi yang berbeda. Berdasarkan hasil analisis kandungan gizi dua jenis varietas singkong (Adira dan Bogor), diperoleh kandungan gizi yang cukup tinggi pada singkong varietas Adira.
